Billsboro Sauvignon Blanc 2016: $18 Good+

The Billsboro Winery Sauvignon Blanc (Sawmill Creek Vineyards, Finger Lakes, NY) $18 [Good+] is a polite wine with tart flavors of gooseberry, grapefruit and steel.  Although some may say this is a “food wine,” the lack of weight and concentration at the wine’s center means that acidity rules — making food pairing difficult.  Nevertheless, this is a wine best consumed with dinner.  Serve cool, not cold.

Light straw in color, there are tart aromas of green apple, gooseberry, grapefruit and a steely metallic note.  Medium bodied, dry, with a high level of mouth watering acidity, the mouth feel is attractively textured.  Balance is very good.  Flaovrs of gooseberry, green apple, steel and chalky mineral have average to good concentration, but acidity tends to rule, obscuring flavor.  The finish is quite tart, with average length.  June 2017
