Billsboro “Sawmill Creek Vineyards” Cabernet Franc 2015: $25 Good+

Uncorking the Billsboro “Sawmill Creek Vineyards” Cabernet Franc (Finger Lakes, NY) 2015 $25 [Good+] is a bit like opening a box of chocolates and immediately being seized by the dark one with the raspberry center.  With air, the candied raspberry aromas of this wine lose their dominance, superseded to a great extent by pepper, tobacco, and oaky notes.  Decant this bottle and drink it with dinner.

Light ruby in color, the aromas are initially medium intense and quite pointed, with strong scents of raspberry and dark chocolate.  With air, aromas of peppery spice, tobacco, and “woody” notes gain prominence.  As the fruit recedes, the aromas become less attractive.  Medium bodied, dry, with light sharp tannins, balance is OK.  Flavors of candied raspberry, dark chocolate, peppery spice and some overtly woody and green notes have moderate concentration but could use more flesh.  The finish is average in length.  March 2017
