Billsboro “Sawmill Creek Vineyards” Cabernet Sauvignon 2015: $30 Good+

The Billsboro Winery Cabernet Sauvignon (Sawmill Creek Vineyards, Finger Lakes, NY) 2015 $30 [Good+] is a well made wine, with pure black currant and black cherry fruit that runs toward the herbal and green side of the spectrum.  Like most other Finger Lakes Cabernet Sauvignon, it is not a good value compared to Cabernet Sauvignon from other regions of this country and the world.  Try this wine with a bowl of Pasta Primavera, a dish which should prove compatible with this wine’s own green elements.

Medium ruby in color, medium intense aromas of sweet black currant, black cherry, brown and peppery spice, fresh tobacco, and a green herbal/weedy note are satisfying.  Medium bodied, with light to medium gritty tannin, balance is good.  Flavors of black currant, black cherry, vanilla, sweet tobacco, cedar and green stemmy notes have good concentration, but the cedar and bitter green notes tend to get the upper hand over fruit.  The finish turns mineral and peppery/spicy with good length.  December 2017
