Billsboro Dry Riesling 2016: $17 Good

The appeal of this Billsboro Winery Dry Riesling (Sawmill Creek Vineyards, Finger Lakes, NY) 2016 $17 [Good] eludes me.  While this bottle certainly shows more latent richness than the 2015, and would have made a nice base for sparkling wine, it is far too tart to sip.  It won’t pair well with many foods either, apart from salads.  Only acid lovers need apply here.  Give this wine at least 2 years in the cellar.

Medium to dark straw in color, the aromas are airy and tart, with scents of lemon, lime, pear, and lesser notes of beeswax and flowers.  With aeration the aromas become less interesting, more elusive.  Medium bodied, dry, with very high acidity, balance is OK.  Flavors of lemon, lime and chalky mineral predominate, with minor contributions of white peach and beeswax.  The finish is tart, tough and mouth puckering, with average length.
